Beetroot Turmeric Balls
The start of the show in the dessert are carrots. Because the dessert is raw, the flavor of carrots is quite prominent and their natural sweetness really shines through.
To naturally sweeten turmeric carrot balls and bind all the ingredients together, I used dates. Medjool dates work the best here because they are soft, juicy, with a melt-in-your-mouth feel.
The main component of the dessert is walnuts. Walnuts have a soft, rich, almost buttery texture, which makes them perfect for recipes that need that light, flaky texture – like raw desserts.
Coconut flour fills the balls with rich flavor, and adds a chewy texture.
The turmeric essentially gives the dessert a rich yellow color, distinct taste, and the added antioxidant benefits.
The saturated color of the dessert is given by impregnation from freshly squeezed beet juice.
Dessert is ideal as a quick snack or to recharge your energy during long hikes or for tea with family and friends.
